White Shrimp
The Chinese white shrimp dwells in the mid-Pacific Ocean,
where it is heavily fished. Fishing methods for this
species result in high levels of bycatch. It is also
farmed. This shrimp grows up to 7 inches |

Dungeness Crab
Crab is the third most popular crustacean after shrimp
and lobster. Yet the traditional system of seafood distribution
is so slow, it has been almost impossible for home consumers
to buy whole Crab. LIVE crab is so scarce it's enough
to make a seafood lover downright "crabby."

Geoduck Clam
Geoducks are harvested in deep waters by professional
divers. Geoducks have been marketed in the United States
as "king clam." Considered a delicacy in Asian
countries along the Pacific, geoducks are also shipped
to Taiwan. |

Grouper
Cousin to the Black Grouper, the Red
Groupers' meat is also characterized as great seafood
quality. Red Groupers
tend to feed on more broken bottom and are more abundant
in the Southeast Gulf of Mexico off of the Florida Keys. |

Alaskan King Crab
Prized for its delicate flavor, tender
texture and ease of enjoyment. King Crab Legs are an
excellent source of high-quality protein, while low in
fat and calories. |

Sam Woo Restaurant is a very
special surprise. We have live
seafood from everywhere. We
purchase our live prawn, sheephead,
cabezon, and clams here in
southern California. Our Dungeness
crab comes from northern California.
From Seattle comes the tasty
geoduck clam. We bring fresh
king crab from Alaska and Maine
lobster from the East Coast.
From Australia we bring king
crab, lobster, and coral trout.
Our famous crystal crab comes
from New Zealand. You have
your choice of cooking methods.
You can have Japanese-style
raw fish or fish sautéed
with ginger and scallion. How
about steamed with butter sauce,
black-bean sauce, or spicy
salt? Don’t forget our
signature Hong Kong style.
Once you taste our fresh seafood
and special cooking style,

Because our seafood comes
from different parts of the
world, we regulate the temperature
of each fish tank to keep it
fresh and alive. For example,
our live prawn and geoduck
clam require 40C. Dungeness
crab, Maine lobster, crystal
crab, cabezon, channel cod,
and rock cod require 45C to
49C. Sheephead requires 55C
to 58C. Besides controlling
the water temperature, we also
match the salinity of the water
to that of the ocean. Our staff
takes every precaution in handling
the seafood to keep it in the
best condition. All this care
adds up to giving you a healthy
and fresh seafood meal that

Live Australian Lobster
Succulent

and Gulf coastal waters, are small--about the size of a
quarter in diameter--with a very delicate flavor. |

Oysters
You will enjoy the salty flavor
and rich texture of our oysters. Oysters are a very healthy
food and

in protein. Oysters can be eaten raw or prepared in a variety
of ways such as fried, steamed, broiled & sauteed. |

Rock Cod
A temperate fish found off the
coasts of south eastern Australia. This is the fish that many
use to batter and fry in English "Fish and Chips" |

Squid
Although the tentacles are edible, the
body is the prime section of meat which can be stuffed whole,
cut into flat pieces, or sliced crosswise into perfect rings.
Squid lends itself to just about every cooking method imaginable
and is often eaten raw in sushi dishes. |
